My kids have shown an interest in getting a watch. We have tried the basic, cheaper fitness watches that we have found on Amazon, but they keep breaking. What are some other watch suggestions for little ones? They would love something that’s waterproof and can count their steps.

There are so many fitness tracking and smart watches on the market and buying one for kids can be a bit of a hit and miss exercise. A lot depends on your budget, but from my observations, the cheaper watches either stop working or the strap is not hardy and breaks easily.
The Fitbit Ace range are highly recommended watch / fitness tracker and is available in two colours. It is waterproof, counts steps, tracks sleep, and you can set bedtime and morning alarms. They are relatively durable and do come with a warrantee against manufacturing defects.
The Biggerfive range of kids watches are a similar style to the Fitbit and far less expensive. They have a simple interface and reviews report it as comfortable and user friendly. Feedback is also favourable when it comes to customer service in the event of any glitches.
I have been thinking of getting a watch for our one grandson, who always asks time-related questions. He loves Mickey Mouse, so I found one on "Best Reviews" that he may like: Disney Kids' W000232 Mickey Mouse Stainless Steel Time Teacher Watch
However, it does not have all of the functions you seek. Best Reviews does list several that may fit your needs, however.

For Christmas this year we bought our kids Space Talk watches. They have been so fantastic. They also allow the kids to call and message pre-approved phone numbers and have lots of other functions and features - including GPS tracking etc. This was our compromise for our 'middle aged' kids who started asking for phones but we felt they were too young. I love getting little messages from them and its great for when they are over at friends houses. Another great feature is that they have a 'school mode' option which blocks all of the fun features during school hours so that your child's teacher doesn't report the watch being a distraction. We really love them.
