
Crispy lemon kale
Even on Christmas, it's a good idea to have a green vegetable on the table. This crispy lemon kale comes together in just a few minutes and balances out the rest of a filling meal.

Ingredients
- 1 bunch kale or 1 large bag
- 2 Tbsps olive oil
- 1 clove garlic minced
- 1 lemon
- salt and pepper
Instructions
- Cut the kale into 1-2” pieces.
- Heat a large saute pan on medium high with 1 tablespoon of olive oil. Add the garlic and saute until it starts to become fragrant but not browned.
- Add the kale (work in bunches if your pan isn’t large enough). Drizzle more olive oil on top and toss the kale in the pan.
- Let the edges of the kale crisp. Once it starts to wilt a bit and the edges start to brown, turn off the heat.
- Squirt the lemon juice over all of the kale, season with salt and pepper, and toss to coat.
